When the job listings give a day rate you won't get paid when you relax at home. If the day rate is USD 300 and rotation two weeks on / two weeks off, you get about 15 x 300 = USD 4.500 per month.

The offshore catering department is different from the same department on cruise ships. The offshore galley ( kitchen ) has to feed may be 100-200 people 6 times per day 7 days per week. The workers coming off their shift, either at midnight or noon, only want to fill their stomach before going to sleep. There is not much need for a chef producing "culinary delights". Many times I have seem an oil rig cook's job description include the words "Financially responsible" or "Budget conscious". I would tend to translate that with something close to "stingy".
